Vinification : vatting by gravity flow, cold prefermentary maceration, 30 temperature-controlled stainless-steel conical vats and 6 wooden vats, slow vatting over a period of 30 days

Maturing : 12–14 months ; 60% in one wine barrels, 40% in two wines barrels
